Source: 10-minute couscous salad
- 100 g couscous
- 200 ml vegetable stock
- 2 spring onions sliced
- 1 red pepper sliced
- 0.5 cucumber diced
- 50 g feta cheese roughly choppped
- 2 tbsp pesto
- 2 tbsp pine nuts toasted
Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed.
Meanwhile prepare the other ingredients and then add to the couscous once it has absorbed the stock.
