Ingredients

  • 100 g couscous
  • 200 ml vegetable stock
  • 2 spring onions sliced
  • 1 red pepper sliced
  • 0.5 cucumber diced
  • 50 g feta cheese roughly choppped
  • 2 tbsp pesto
  • 2 tbsp pine nuts toasted

Instructions

  1. Tip the couscous into a large bowl andĀ pour over the stock. Cover, then leave for 10 minsĀ until fluffy and all the stock has been absorbed.

  2. Meanwhile prepare the other ingredients and then add to the couscous once it has absorbed the stock.
