Pilau Rice
Servings 2 people
Ingredients
- 1 onion small, sliced
- 200 ml rice long grain
- 1 bay leaf
- 1 cardamon pod
- 1 tsp cumin seeds
- 2 cloves
- 2.5 cm cinnamon stick
- 1 tsp ground tumeric
- 400 ml chicken stock
- 1 tbsp groundnut oil
Instructions
- Dry toast the cumin seeds, cloves and cinnamon stick for a minute until fragrant and then grind into a powder using a spice grinder.
- Heat the oil in a frying pan and cook the onions on a low heat until soft. Add the ground spices and the turmeric and cook for a minute.
- Add the remaining ingredients, cover the pan with a lid and cook on a low heat for 12 minutes or until the rice is done.
Notes
You can also add some additional vegetables such as frozen peas.
