Amalfi Lemon Pasta

Ingredients

  • 2 tbsp olive oil
  • 1 lemon zested and juiced
  • 2 cloves garlic peeled and crushed
  • 160 g spaghetti
  • 20 g parmesan cheese
  • 5 g parsley roughly chopped

Instructions

  • Cook the pasta for 10 minutes in boiling water along with the juiced and zested lemon halves.
  • Meanwhile heat the olvice oil on a medium heat and then add the garlic. Cook for 2 minutes and then add the lemon zest and cook for another minute before adding half the lemon juice and cooking for 2 more minutes.
  • When the pasta is done add to the frying pan along with a little of the retained cooking water. Add the cheese and remaining lemon juice and mix until combined. Serve and garnish with the parsley.
