Green Bean Curry

Ingredients

  • 3 tbsp vegetable oil
  • 5 curry leaves
  • 250 g green beans trimmed and cut into 5cm pieces
  • 2 cloves garlic crushed
  • 1 onion finely chopped
  • 2 chillies finely chopped
  • 1 cinnamon stick
  • 1 tomato diced
  • 1 tsp ground cumin
  • 1 tsp ground tumeric
  • 1 tsp ground black pepper
  • 400 ml coconut milk

Instructions

  • Add the oil and the curry leaves to a pan and fry for a minute until the curry leaves begin to release their aromas. Add the onion and fry gently for 5 minutes until softened then add the tomatoes and fry for another 5 minutes. Add the garlic and chillies and fry for a minute until the garlic begins to colour.
  • Add the spices to the vegetables and fry for a minute until they have seasoned. Add the coconut milk and bring to a gentle simmer. and then add the green bean pieces and cook for 10 minutes until tender.
