Green Bean Curry
Servings 2 people
Ingredients
- 3 tbsp vegetable oil
- 5 curry leaves
- 250 g green beans trimmed and cut into 5cm pieces
- 2 cloves garlic crushed
- 1 onion finely chopped
- 2 chillies finely chopped
- 1 cinnamon stick
- 1 tomato diced
- 1 tsp ground cumin
- 1 tsp ground tumeric
- 1 tsp ground black pepper
- 400 ml coconut milk
Instructions
- Add the oil and the curry leaves to a pan and fry for a minute until the curry leaves begin to release their aromas. Add the onion and fry gently for 5 minutes until softened then add the tomatoes and fry for another 5 minutes. Add the garlic and chillies and fry for a minute until the garlic begins to colour.
- Add the spices to the vegetables and fry for a minute until they have seasoned. Add the coconut milk and bring to a gentle simmer. and then add the green bean pieces and cook for 10 minutes until tender.
