BBQ Satay Chicken Legs

Ingredients
- 4 chicken legs or thighs and drumsticks
Marinade
- 1 stalk lemongrass roughly chopped
- 1 onion roughly chopped
- 2 cloves garlic peeled
- 1 tbsp ground tumeric
- 1 tbsp vegetable oil
- 1 tsp ground cumin
- 1 tbsp caster sugar
- 1.5 tsp salt
- 50 g coconut milk
Sauce
- 350 g coconut milk
- 4 tbsp Jimmy's Sate sauce
- 0.5 tsp garlic powder
- 1 tbsp light soy sauce
- 0.5 tbsp caster sugar
- 2 tbsp crunchy peanut butter
Instructions
- Add all the marinade ingredients to a blender and blend until smooth. Rub all over the chicken pieces and leave to marinate in the fridge for at least 30 minutes.
- Add all the sauce ingredients to a pan and heat over a medium heat over a medium heat until it has thickend up. This should take about 20 minutes.
- Once the chicken has marinated sufficently cook on the BBQ, this should take about 40 minutes.
- Plate up, poor over the satay sauce and serve.
