Source: 10-minute couscous salad
Servings 2 people
- 100 g couscous
- 200 ml vegetable stock
- 2 spring onions sliced
- 1 red pepper sliced
- 0.5 cucumber diced
- 50 g feta cheese roughly chopped
- 2 tbsp pesto
- 2 tbsp pine nuts
- Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed.
- Meanwhile prepare the other ingredients and then add to the couscous once it has absorbed the stock.
